Nah, it doesn't depend on how you pronounce it as japanese can be written in romaji (roman alphabet;western languages use this), full hiragana (mainly for beginners and kids) or hiragana+katakana+kanji.
As such, in romaji it's written as Omoshiroi, just because some voice actors do not pronounce it clearly you thought it was umoshiroi but when spoken by a normal japanese person there is a distinct 'o' sound at the beginning and no 'u' sound.
Omoshiroi is not a borrowed word and is a word from the japanese language itself and therefore is not written in katakana but written in Hiragana or hiragana+kanji.
Your referring to names being written as they're pronounced is referring to how the japanese language uses katakana to write words which are borrowed from other languages and not originally from the japanese language. Take, a puncture for example:
